Ingredients

  • 500g Eskort Diced Bacon
  • 500ml (2 cups) cauliflower, roughly chopped
  • 60ml (¼ cup) chives, chopped
  • 250ml (1 cup) Grana Padano cheese
  • 750ml (3 cups) cake flour
  • 10ml (2 tsp) baking powder
  • 5ml (1 tsp) salt
  • 125ml (½ cup) butter
  • 3 eggs
  • 500ml (2 cups) milk

  • This recipe contains wheat (gluten) and dairy (lactose).
  • Substitutions
  • Cake Flour (gluten): Use all purpose gluten-free flour.
  • Baking Powder (gluten): Use gluten-free baking powder.
  • Milk (lactose): Use almond milk, rice milk or coconut milk.
  • Butter (lactose): Use ghee (clarified butter) or solidified coconut oil.

Method

  • Pork Sausages
  • Heat the oven to 180°C.
  • Place the pork sausages on a greased pan and bake for 10 minutes.
  • Crispy Duck Fat Baby Potatoes
  • Heat the duck fat in a large saucepan and fry the baby potatoes until crisp and golden.
  • Creamy Red Pepper Sauce
  • Char the red peppers over a flame or under the oven grill.
  • Remove the charred peel and chop the peppers.
  • Heat olive oil in a saucepan and fry the peppers, thyme and garlic.
  • Add cream and season with salt and pepper.

Serve

Add the sausages and crispy potatoes to a bowl and serve topped with creamy red pepper sauce.
