Bacon, Cheese & Jalapeño Muffins

Ingredients:

  • 2 cups of Cake flour
  • 1 1/3 cup of milk
  • 1 large egg, beaten
  • 1/3 cup unsalted butter, melted
  • 1 cup of diced bacon, cooked
  • 2 jalapeno’s, deseeded and diced
  • 1⁄2 cup white cheddar cheese, grated 1⁄2 tsp Garlic powder
  • 2 tsp baking powder
  • 1⁄2 tsp dried origanum
  • Pinch of salt
  • Freshly ground black pepper

Method:

  • Preheat oven to 180 degrees and spray or grease a muffin tray
  • In a bowl add the beaten egg, milk, butter and spices and mix.
  • Then add the cheese, jalapenos and bacon and mix.
  • Fold in the flour gently until just combined ensuring not to over mix so that we still get tender
  • Soft muffins and not rocks!
  • Fill the muffin pan with the mixture and bake in a preheated oven for 15 to 20 mins.
