Bacon & Chocolate Cookies

  • 500g Eskort Minced Bacon 
  • ½ cup butter at room temperature
  • ½ cup castor sugar 
  • ½ cup treacle sugar 
  • 1 egg 
  • 1 tsp vanilla essence 
  • 1 cup flour 
  • ½ cup cocoa powder 
  • 1 tsp baking powder 
  • 1 tsp salt 
  • 1 cup dark chocolate, chopped 
  • 1 cup icing sugar for coating the cookies


  • Preheat the oven to 180°C.
  • Fry the minced bacon in a frying pan over a moderate heat until crispy. 
  • Set the bacon aside to cool. 
  • In a mixer or large mixing bowl cream the sugar and butter. 
  • Add the egg and vanilla and mix well. 
  • Add the flour, baking powder, salt and chocolate to the butter and mix well until a ball of soft cookie dough forms. 
  • Add the bacon and mix well. 
  • Roll into ¼ cup sized balls, then roll each ball in the icing sugar. 
  • Place the cookies on a greased baking tray and refrigerate for two minutes. 
  • Bake the cookies for 10 – 15 minutes – they will still be gooey in the middle. 
  • Allow to cool then store in an air-tight container. 


  • Serve with a cup of milk when everyone’s homework is done and rooms are clean.
