Ingredients

  • Bacon Granola:
  • 200g Eskort Minced Bacon, fried until crispy
  • 500 ml (2 C) rolled oats
  • 250 ml (1 C) mixed seeds and nuts
  • 125 ml (½ C) coconut oil
  • 125 ml (½ C) honey
  • 125 ml (½ C) treacle sugar
  • 15 ml (1 T) cinnamon
  • 5 ml (1 t) vanilla
  • Spiced Peanut Butter Porridge:
  • 1§ L (4 C) cooked soft maize porridge
  • 125 ml (½ C) cream
  • 125 ml (½ C) chunky peanut butter
  • 5 ml (1 t) cinnamon
  • 5 ml (1 t) nutmeg
  • 5 ml (1 t) ginger
  • 60 ml (¼ C) apricot jam

Method

  • Bacon Granola:
  • Preheat oven to 180°C.
  • Add coconut oil, honey and treacle sugar to a saucepan over moderate heat. Allow the mixture to come to a boil and allow to simmer for 5 minutes.
  • Add the crispy Minced Bacon, oats, vanilla and cinnamon to a mixing bowl and mix until combined.
  • Add the granola mixture to a greased baking tray and bake for 15 min.
  • Porridge:
  • Cook porridge in a pot over medium heat.
  • Add the cream, peanut butter and spices to the porridge and mix until well combined.

Serve

Serve porridge while hot and top with bacon granola and apricot jam.
