  • 500g Eskort Minced Bacon
  • 375ml (1½ cups) cake flour
  • 5ml (1 tsp) baking powder
  • 5ml (½ tsp) salt
  • 5ml (1 tsp) vanilla essence
  • 125ml (½ cup) treacle sugar
  • 90ml (6 tbsp) white sugar
  • 125ml (½ cup) butter
  • 1 egg
  • 750ml (3 cup) popcorn, popped
  • 250ml (1 cup) white chocolate, chopped

  • Substitutions
  • Cake Flour (gluten): Use gluten-free cake flour.
  • Butter (lactose): Use ghee (clarified butter).

  • Preheat the oven to 180°
  • Fry the minced bacon in a pan over moderate heat until crispy, then set aside to cool.
  • Add the butter, treacle sugar, white sugar and egg into a mixer.
  • Mix until well-combined and light in colour.
  • Add the dry ingredients and mix until a ball of dough forms.
  • Add the popcorn, crispy bacon and white chocolate and mix well.
  • Shape the dough into small balls and press flat onto a greased baking tray to form cookies.
