Ingredients
Eskort 750g BBQ Loin Ribs
1 onion, cut into rings
1 large egg
2tbsp Eskort Secret rib sauce
1/2 cup all-purpose flour
2tbsp corn starch
2tbsp cajun seasoning
2tbsp chilli powder
Salt and pepper to taste
2cups canola oil, for frying
Method
Place the BBQ loin ribs on a grill, over hot coal. Braai for 15 min – 20 min on each side turning every 5 minutes and basting with excess sauce frequently.
Slice onion into thin slices.
In a medium pot or pan heat oil.
Set up breading station by setting out 2 wide, shallow bowls. In the first bowl whisk together egg and Eskort Secret rib sauce. Whisk flour, corn starch, cajun seasoning, pinch of salt and pepper together in the second bowl.
Dip the onion rings into the egg mixture until fully coated. Lift onion with the fork and shake gently so excess liquid drips back into the dish. Place onion in the flour mixture and turn several times to coat.
Shallow fry the onion rings in the preheated oil until golden brown 3- 4minutes. Drain on paper towels while you deep-fry the remaining rings.
Serve
Serve with potato wedges or your favourite fresh salad
