Cheese dip with Crispy Eskort Streaky Bacon and Cauliflower steaks

  • Cheese Dip:
  • 60 ml butter
  • 125 ml flour
  • 750 ml milk
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 60 ml olive oil
  • 20 ml sage, chopped
  • 20 ml thyme
  • 1 red chilli, chopped
  • 125 ml parmesan cheese
  • 125 ml white cheddar
  • Bacon:
  • 200g Eskort Streaky Bacon
  • 15 ml Eskort Braai Spice (BBQ Spice)
  • 30 ml olive oil
  • Cauliflower steaks:
  • 2 large heads of cauliflower
  • 60 ml olive oil
  • Salt and pepper
  • zest and juice of one lemon
  • handful of fresh basil
  • 60 ml chives


  • Cheese Dip:
  • Add the butter and olive oil to a saucepan over medium to high heat.
  • Fry the onions, garlic, chilli, sage and thyme until the onions are soft.
  • Whisk the flower and milk together.
  • Slowly add this to the saucepan while stirring
  • Reduce the heat and add the cheeses.
  • Simmer until the cheese has melted.
  • Season to taste with salt and pepper.
  • Bacon:
  • Preheat the oven to 190°C
  • Place the bacon on a baking tray lined with baking paper.
  • Drizzle with olive oil and season with BBQ spice.
  • Bake in the oven for 10-15min until the fat has rendered and the bacon is crispy.
  • Cauliflower Steaks:
  • Slice the cauliflower into large slices keeping the core to connect the little head.
  • Place the cauliflower steaks on a baking tray and drizzle with olive oil.
  • Add the lemon juice, the zest and season with salt and pepper.
  • Bake for 20min until golden but still tender.


Start with the cauliflower, ladle generous amounts of cheese sauce and finish with the crispy bacon.

Finish with a handful of basil and chives.
