Cheese Griller & Fennel Salad with Cumin & Chilli mayo
Ingredients
- Cheese grillers and Fennel:
- 500 g Eskort Cheese Grillers
- 2 fennel bulbs, thinly sliced
- 30 ml olive oil
- 5 ml pepper
- juice from half a lemon
- Salad and dressing:
- 4 handfuls baby spinach
- 1 handful fresh mint leaves
- ½ cucumber, cut into ribbons
- 10 ml ground cumin
- 1 small red chili, chopped
- 125 ml mayonnaise
- 45 ml olive oil
- 45 ml lime juice
Method
- Cheese grillers and Fennel:
- Preheat a frying pan on a high heat.
- In a frying pan, heat olive oil, add cheese grillers and fennel and fry on high heat until the fennel is golden.
- Season with pepper and lemon juice.
- Salad and dressing:
- Mix ground cumin, chili and mayonnaise in a small bowl.
- Add baby spinach, mint and cucumber to a large bowl and dress with olive oil and lime juice.
