Cheesy Bacon & Butternut Bake

Ingredients
200g Eskort Streaky bacon
2 large butternuts
250 ml (1 C) cream cheese
250 ml (1 C) mozzarella cheese, grated
250 ml (1 C) soft feta
2 red onions, quartered
60 ml (¼ C) red pepper pesto
60 ml (¼ C) sundried tomato pesto
oil for cooking
salt and pepper to taste
4 sprigs fresh thyme
Method
Preheat oven to 190°C.
Slice butternuts in half lengthwise and remove seeds.
Place butternuts open side up on a greased baking tray and fill with bacon and onion.
Drizzle with olive oil, season with salt and pepper and place thyme on top. Bake for 15 minutes.
In a mixing bowl, combine cream cheese, mozzarella and feta.
Spoon cheese mix on top of the baked butternuts.
Put butternuts back into the oven to grill for 7 minutes.
Serve
Serve butternut with red pepper and/or sundried tomato pesto.
