Serve butternut with red pepper and/or sundried tomato pesto.
Cheesy Bacon & Butternut Bake
Ingredients
- 200g Eskort Streaky bacon
- 2 large butternuts
- 250 ml (1 C) cream cheese
- 250 ml (1 C) mozzarella cheese, grated
- 250 ml (1 C) soft feta
- 2 red onions, quartered
- 60 ml (¼ C) red pepper pesto
- 60 ml (¼ C) sundried tomato pesto
- oil for cooking
- salt and pepper to taste
- 4 sprigs fresh thyme
Method
- Preheat oven to 190°C.
- Slice butternuts in half lengthwise and remove seeds.
- Place butternuts open side up on a greased baking tray and fill with bacon and onion.
- Drizzle with olive oil, season with salt and pepper and place thyme on top. Bake for 15 minutes.
- In a mixing bowl, combine cream cheese, mozzarella and feta.
- Spoon cheese mix on top of the baked butternuts.
- Put butternuts back into the oven to grill for 7 minutes.
