Cheesy Bacon Corn Dogs

  • 500g Eskort Streaky Bacon
  • 250 g Mozzarella cheese cut into 3cm cubes
  • 250g Cheddar cheese cut into 3cm cubes
  • ½ C eskort Braai Spice 
  • 2 C flour
  • 2 C butter milk 
  • Oil for deep frying

Ingredients Serving:

  • ¼ C Sriracha sauce 
  • 1 C mayonnaise 
  • Zest and juice from one lemon
  • 1 C mixed herbs chopped


  • Heat your oil in a large pot over a high heat. 
  • Start by putting the one end of the streaky bacon on the skewer. 
  • Add a block of mozzarella and fold the bacon back over the skewer and mozzarella. 
  • Do the same with the cheddar until you get to four cubes of cheese on one skewer. 
  • Combine the Braai spice with the flour.
  • Dip the skewers into the flour then the buttermilk and back into the flour. 
  • Do this with all your skewers. 
  • Fry the bacon “dogs” until golden. 
  • Remove from the oil and drain the oil on some kitchen towel.



  • Swirl the sriracha sauce into the mayo with the lemon juice and the zest. 
  • Serve the mayo on the bacon “Dogs” and serve with the sauce and herbs.
