  • Hot Dogs:
  • 4 Eskort Cheese Grillers
  • 50 g leeks
  • 125 ml flour
  • 2 hot dog rolls
  • 30 ml butter
  • 10 ml salt
  • handful rocket
  • Spicy Tomato Relish:
  • 120 g cherry tomatoes
  • 1 red chilli
  • 125 ml apricot jam
  • 45 ml vinegar
  • olive oil for cooking
  • Cheese Sauce:
  • 250 ml cheddar cheese, cut into blocks
  • 250 ml milk
  • 5 ml white pepper


  • Spicy Tomato Relish:
  • In a saucepan over medium heat, add olive oil, cherry tomatoes and fry until the tomato skins start to burst.
  • Add chopped red chilli, apricot jam and vinegar to the saucepan and simmer until tomatoes are soft. Remove from the heat and set aside.
  • Cheese Sauce:
  • In a saucepan over a medium heat, add cheese, milk and white pepper.
  • Stir the sauce until the cheese has melted and a smooth sauce forms. Do not boil.
  • Hot Dog:
  • Fry cheese grillers in a frying pan with some olive oil until golden.
  • Dust the sliced leeks with the flour and set aside to rest for two minutes.
  • Fry the leeks in a shallow pot of heated oil until golden and crispy.
  • Season with salt.
  • Butter the hot dog rolls and toast them in a well heated frying pan.
  • Assemble:
  • Top the toasted buns with a generous amount of fresh rocket.
  • Add spicy tomatoes, cheese grillers and leeks.
  • Drizzle with generous amounts of cheese sauce.
