  • Chicken and Onion Focaccia
  • 800g Eskort Chicken Braai Burgers, sliced into fingers
  • 1kg store-bought dough
  • 8 shallots, cut lengthwise into quarters
  • 45ml (3 tbsp) fresh thyme
  • 45ml (3 tbsp) olive oil
  • 5ml (1 tsp) coarse salt
  • 60ml (¼ cup) green olives, chopped
  • Balsamic Cream Cheese
  • 250ml (1 cup) cream cheese
  • 30ml (2 tbsp) balsamic vinegar
  • 15ml (1 tbsp) golden syrup

  • This recipe contains soya (soy), wheat (gluten) and dairy (lactose).
  • Substitutions:
  • Chicken Braai Burgers (soy): Cut prego steaks into strips, flash fry in olive oil and use.
  • Dough (gluten): Use gluten-free dough.
  • Cream Cheese (lactose): Use vegan or lactose-free cream cheese.


  • Chicken and Onion Focaccia
  • Preheat the oven to 190°C.
  • Roll the dough out on a flour-dusted surface, place on a large oven tray and drizzle with olive oil.
  • Place the chicken burger fingers, shallots, thyme, coarse salt and green olives on the dough.
  • Bake for 20 minutes.
  • Balsamic Cream Cheese
  • While the focaccia is in the oven, combine the balsamic vinegar, cream cheese and golden syrup in a small mixing bowl.


Slice and serve with balsamic cream cheese.
