Serve sausages and peppers on mash with a spoonful of sour cream.
Chicken Sausages & Roasted Peppers with chilli pumpkin mash
Ingredients
- Eskort Chicken Sausage
- 2 red peppers
- olive oil
- 15 ml (1 T) smoked paprika
- 30 ml (2 T) fresh thyme
- 1 L (4 C) pumpkin, cooked
- 15 ml (1 T) butter
- 15 ml (1 T) sriracha sauce
- salt and pepper to taste
- 60 ml (¼ C) sour cream
Method
- Preheat the oven to 180°C.
- Quarter the red peppers and place them in an oven tray with the sausages, olive oil, thyme and smoked paprika. Bake for 10 minutes.
- Mash the pumpkin with butter and sriracha sauce and season with salt and pepper.
