Ingredients
Eskort Chicken Sausage
2 red peppers
olive oil
15 ml (1 T) smoked paprika
30 ml (2 T) fresh thyme
1 L (4 C) pumpkin, cooked
15 ml (1 T) butter
15 ml (1 T) sriracha sauce
salt and pepper to taste
60 ml (¼ C) sour cream
Method
Preheat the oven to 180°C.
Quarter the red peppers and place them in an oven tray with the sausages, olive oil, thyme and smoked paprika. Bake for 10 minutes.
Mash the pumpkin with butter and sriracha sauce and season with salt and pepper.
Serve
Serve sausages and peppers on mash with a spoonful of sour cream.
