Ingredients

  • Eskort Chicken Sausage
  • 2 red peppers
  • olive oil
  • 15 ml (1 T) smoked paprika
  • 30 ml (2 T) fresh thyme
  • 1 L (4 C) pumpkin, cooked
  • 15 ml (1 T) butter
  • 15 ml (1 T) sriracha sauce
  • salt and pepper to taste
  • 60 ml (¼ C) sour cream

Method

  • Preheat the oven to 180°C.
  • Quarter the red peppers and place them in an oven tray with the sausages, olive oil, thyme and smoked paprika. Bake for 10 minutes.
  • Mash the pumpkin with butter and sriracha sauce and season with salt and pepper.

Serve

Serve sausages and peppers on mash with a spoonful of sour cream.
