Bacon Wrapped Grapes Baked in a Masala Syrup

Ingredients

  • 400 g Eskort Rindless Streaky Bacon
  • 1 punnet green grapes
  • olive oil for drizzling
  • 1 French baguette
  • Masala Syrup:
  • 2 Rooibos tea bags
  • 125 ml sugar
  • 125 ml water
  • 1 cinnamon stick
  • 1 thumb size fresh ginger root, sliced
  • 25 g fine black pepper
  • 15 ml cardamom seeds
  • 15 ml garam masala

Method

  • Masala Syrup:
  • Preheat the oven to 180°C
  • Place all syrup ingredients in a small pot or saucepan over a medium heat and stir until the sugar has Allow to simmer for 10 minutes.
  • Pour syrup through a sieve to remove waste.
  • Wrap individual grapes in a strip of bacon and place on an oven tray lined with baking paper.
  • Drizzle syrup over the grapes and bake for 15 – 20 minutes.

Serve

Serve the bacon wrapped grapes on slices of toasted French baguette drizzled with olive oil.

Honey Glazed Rashers with Brie on Fruitcake

Ingredients

  • 500g Eskort Honey Glazed Rashers
  • 8 fruitcake slices
  • 200 g Brie, sliced

Method

  • Line an oven tray with baking paper.
  • Place rashers on the baking tray and bake at 180֯ºC for 10 – 15 minutes.
  • Remove from the oven and place a slice of Brie on top of each rasher.
  • Serve on a slice of fruit cake.

Mini Cheese Grillers with Sweet Mustard, Cream Cheese and Shortbread

Ingredients

  • 400 g Eskort Mini Cheese Grillers
  • olive oil for cooking
  • 250 g cream cheese
  • Sweet Mayonnaise:
  • 125 ml mayonnaise
  • 125 ml condensed milk
  • 15 ml hot English mustard
  • 5 ml vinegar
  • Shortbread:
  • 125 ml butter
  • 60 ml castor sugar
  • 180 g plain flour
  • 15 ml thyme, chopped

Method

  • Shortbread:
  • Pre-heat oven to 180ºC.
  • Line a baking tray with baking paper.
  • Place all ingredients in a food processor and pulse until a soft ball of dough forms.
  • Roll the dough out on a floured surface to 50mm
  • Place the rolled-out dough onto the baking tray and bake for 10 minutes.
  • Sweet Mustard Mayonnaise:
  • In a mixing bowl combine all the ingredients and mix until well combined. Store in a sterilised container in the fridge.
  • Cheese Grillers:
  • Heat olive oil in a frying pan over a medium high heat and fry the cheese grillers until golden brown.

Serve

Serve the cheese grillers with the sweet mustard mayo, shortbread and cream cheese.
