Ingredients

  • Rashers
  • 1 packet Eskort Honey Glazed Rashers
  • 500 ml (2 C) flour
  • 60 ml (¼ C) Eskort Braai Spice
  • 500 ml (2 C) buttermilk
  • 1 large pot of oil for deep-frying
  • Dip
  • 250 ml (1 C) cream cheese
  • 45 ml (3 T) honey
  • 15 ml (1 T) thyme, chopped
  • Waffles
  • 500 ml (2 C) cake flour
  • 30 ml (2 T) brown sugar
  • 5 ml (1 t) baking powder
  • 1 pinch of salt
  • 375 ml (1 ½ C) buttermilk
  • 3 eggs
  • 5 ml (1 t) vanilla
  • 125 ml (½ C) butter, melted

Method

  • Rashers
  • Place pot of oil over high heat.
  • Combine flour and braai spice in a mixing bowl.
  • Dip the rashers into the flour, then the buttermilk and back into the flour (ensure that they are well coated).
  • Fry the rashers until golden and crispy.
  • Brush the waffles with the butter and toast them in a hot frying pan for one minute on each side just to crisp them up a bit.
  • Dip
  • Whisk all ingredients together in a small bowl.
  • Waffles
  • In a large mixing bowl, combine flour, sugar, baking powder and salt.
  • In another bowl, combine buttermilk, eggs, vanilla and melted butter. Pour into the flour mixture and whisk until smooth.
  • Cook in a greased waffle iron until golden and slightly crispy.

Serve

Spread cream cheese dip on the waffles and top with crispy rashers.
Tip: Use store-bought waffles to save time. Brush them with butter and lightly toast them in a hot pan before serving.
