- Pulled Pork Spice
- 500 g Eskort Smoked Pulled Pork
- 45 ml (3 T) olive oil
- 5 ml (1 t) smoked paprika
- 5 ml (1 t) ground cumin
- 5 ml (1 t) ground dry ginger
- zest of one lemon
- 45 ml (3 T) thyme, chopped
- Crispy Fried Potatoes
- 6 large potatoes, unpeeled, halved and boiled
- 15 ml (1 T) salt
- oil, for deep frying

Method
- Smoked Pulled Pork Spice
- Fry the pulled pork in oil for 10 minutes over moderate heat until crispy and cooked dry.
- Stir in the thyme and spices, then remove the pan from the heat.
- Crispy Fried Potatoes
- Place a pot of oil over high heat.
- While the oil heats, use a tea towel to dry the boiled potatoes before placing in hot oil.
- Deep fry the boiled potato halves until golden brown and crispy.
