Ingredients

  • 200g Eskort Diced Bacon
  • 1L (4 C) cooked soft porridge
  • 15 ml (1 T) garlic, chopped
  • 15 ml (1 T) curry powder
  • 60 ml (¼ C) sesame seeds
  • 60 ml (¼ C) pumpkin seeds
  • 60 ml (¼ C) coconut
  • 60 ml (¼ C) butter
  • 4 eggs
  • olive oil for cooking
  • salt & pepper to taste

Method

  • For the porridge, heat a pot of water over a High heat.
  • Whisk in the maize meal and lower the heat.
  • Add the butter and whisk it into the soft porridge.
  • Heat a frying pan over a moderate heat and add the olive oil
  • Fry the Diced Bacon until crispy then lower heat.
  • Add curry powder, seeds, coconut and garlic and fry for 2 minutes.
  • Fry the eggs sunny side up in a separate pan.
  • Stir butter through the porridge and serve.

Serve

Serve porridge hot and top with curried bacon and eggs.
