Serve porridge hot and top with curried bacon and eggs.
Curried Bacon & Eggs on Creamy Porridge
Ingredients
- 200g Eskort Diced Bacon
- 1L (4 C) cooked soft porridge
- 15 ml (1 T) garlic, chopped
- 15 ml (1 T) curry powder
- 60 ml (¼ C) sesame seeds
- 60 ml (¼ C) pumpkin seeds
- 60 ml (¼ C) coconut
- 60 ml (¼ C) butter
- 4 eggs
- olive oil for cooking
- salt & pepper to taste
Method
- For the porridge, heat a pot of water over a High heat.
- Whisk in the maize meal and lower the heat.
- Add the butter and whisk it into the soft porridge.
- Heat a frying pan over a moderate heat and add the olive oil
- Fry the Diced Bacon until crispy then lower heat.
- Add curry powder, seeds, coconut and garlic and fry for 2 minutes.
- Fry the eggs sunny side up in a separate pan.
- Stir butter through the porridge and serve.
