Curry Beans On Toast With Pork Sausage
Ingredients:
- Eskort Gold medal Pork Sausages
- 1 tin baked beans
- 1 onion chopped
- 3 T yellow curry paste
- 4 sliced crusty bread
- 4-8 eggs scrambled
- 3 T oil for frying the onion
- 1 t salt to taste
- 2 C water
- 3 t oil for the sausages
Method
- Place the pork sausages in a pan of hot water with the 3 T oil and cook it until the water evaporates and the pork sausages are fried in the oil until golden. Takes about 10 min.
- Place another frying pan over a moderate heat and add the onion with the curry paste.
- Add the baked beans and stir well.
- Toast your bread in a toaster or in a pan.
- Season the beans with the salt.
Serve:
- Serve the beans on the toast with the sausages and the scrambled eggs.
- Garnish with chopped chives.
