Deep-fried Ribs with a Jalapeño-Apple Dip
Ingredients
- Ribs
- 750 g Eskort Marinated Loin Ribs
- 250 ml (1 C) cake flour
- 30 ml (2 T) BBQ Spice
- 250 ml (1 C) water
- Dip
- 125 ml (½ C) spring onion, chopped
- 2 large pickled jalapeños, chopped
- 2 granny smith apples, peeled and chopped
- 30 ml (2 T) olive oil
- 1 charred green pepper
- salt and pepper to taste
Method
- Ribs
- Preheat oven to 200°C.
- Wrap ribs in heavy-duty foil and place on a baking tray. Bake in the oven for 15 minutes.
- Slice cooked ribs into individual riblets.
- Combine flour, BBQ spice and water in a bowl to make a batter.
- Dip ribs into batter and coat fully.
- Deep fry until coating is golden.
- Dip
- Place spring onion, jalapeños and apples on a greased baking tray. Drizzle with olive oil and cook in the oven for 10 minutes (this can be done at the same time as the ribs).
- Place cooked spring onion, jalapeños and apples in a food processor. Add charred green pepper and blend until smooth.
- Season to taste.
