Deep-fried Ribs with a Jalapeño-Apple Dip

  • Ribs
  • 750 g Eskort Marinated Loin Ribs
  • 250 ml (1 C) cake flour
  • 30 ml (2 T) BBQ Spice
  • 250 ml (1 C) water
  • Dip
  • 125 ml (½ C) spring onion, chopped
  • 2 large pickled jalapeños, chopped
  • 2 granny smith apples, peeled and chopped
  • 30 ml (2 T) olive oil
  • 1 charred green pepper
  • salt and pepper to taste


  • Ribs
  • Preheat oven to 200°C.
  • Wrap ribs in heavy-duty foil and place on a baking tray. Bake in the oven for 15 minutes.
  • Slice cooked ribs into individual riblets.
  • Combine flour, BBQ spice and water in a bowl to make a batter.
  • Dip ribs into batter and coat fully.
  • Deep fry until coating is golden.
  • Dip
  • Place spring onion, jalapeños and apples on a greased baking tray. Drizzle with olive oil and cook in the oven for 10 minutes (this can be done at the same time as the ribs).
  • Place cooked spring onion, jalapeños and apples in a food processor. Add charred green pepper and blend until smooth.
  • Season to taste.


Serve the ribs with the dip and a fresh salad.
