Double Smoked Ham Salad & Pineapple Vinaigrette

Ingredients
- Double smoked ham
- Blackberries & raspberries (washed)
- Sweet melon cubes 5
- Feta cheese
- Salad leaves (washed)
- Toasted almond flakes
- Balsamic reduction to drizzle
Dressing
- 1 cup pineapple juice
- 1/2 cup light olive oil
- 1 Tsp Dijon mustard
- 1/2 Tsp sugar
- 1/8 salt
- 2 minced cloves
Method
In a medium bowl, combine all and whisk until well-blended.
Serve
Scatter salad leaves, blackberries, raspberries and sweet melon over a salad platter, top with double smoked ham, feta and sprinkle some toasted almonds. Drizzle the pineapple vinaigrette and balsamic vinegar. Serve it immediately
