Serve the sweet potato salad with the ribs
Eskort Marinated Loin Ribs with Whole Roasted Sweet Potato Salad
- 2kg Eskort Marinated Loin Ribs
- 4 sweet potatoes cut into wedges
- 2 T chives chopped
- 2 T basil chopped
- 2 t parsley chopped
- ¼ C Sundried tomatoes chopped
- Zest from 1 lemon
- 3 T avo oil
- Braai your ribs for 10 minutes on each side, turning them every 5 minutes and basting them with the sauce in the packet.
- Braai the sweet potatoes for 15-20 minutes or until cooked through.
- While the ribs and sweet potatoes are on the braai, combine the herbs, sundried tomatoes, and lemon zest with the avocado oil.
- As soon as the sweet potatoes come of the fire combine them with the herb mixture in the bowl.
