Ingredients

  • 375 g Eskort Jalapeño Pork Sausages
  • 1 kg baby potatoes, halved
  • 250 ml leeks, chopped
  • 3 peaches, quartered
  • 125 ml olive oil
  • 45 ml whole grain mustard
  • salt and pepper to taste
  • salad greens

Method

  • Preheat the oven to 190°C.
  • Line a deep-dish oven pan with baking paper and add the sausages, baby potatoes, peaches and leeks.
  • In a small jug, combine the olive oil and mustard and season with salt and pepper.
  • Pour the sauce over the sausages and potatoes and mix well to coat everything.
  • Bake in the oven for 35 minutes.

Serve

Serve with fresh salad greens.
