Festive Fruity Sweet Potato Bake
Ingredients
- 500 g sweet potatoes, parboiled
- 250 ml (1 C) fruit cake mix
- 5 ml (1 t) cloves
- 5 ml (1 t) cinnamon
- 5 ml (1 t) ginger
- 5 ml (1 t) nutmeg
- 60 ml (¼ C) brandy
- 60 ml (¼ C) cherry liqueur
- 60 ml (¼ C) maple syrup

- Fruit Cake Mix (gluten): Use gluten-free fruit cake mix.
Method
- Preheat oven to 180°C.
- Slice sweet potatoes in half and place in a large mixing bowl.
- Add the rest of the ingredients and combine
- Transfer to a baking dish and bake for 20 minutes or until slightly golden.
