Ingredients

  • 500 g sweet potatoes, parboiled
  • 250 ml (1 C) fruit cake mix
  • 5 ml (1 t) cloves
  • 5 ml (1 t) cinnamon
  • 5 ml (1 t) ginger
  • 5 ml (1 t) nutmeg
  • 60 ml (¼ C) brandy
  • 60 ml (¼ C) cherry liqueur
  • 60 ml (¼ C) maple syrup

  • This recipe contains wheat (gluten).
  • Substitutions
  • Fruit Cake Mix (gluten): Use gluten-free fruit cake mix.

Method

  • Preheat oven to 180°C.
  • Slice sweet potatoes in half and place in a large mixing bowl.
  • Add the rest of the ingredients and combine
  • Transfer to a baking dish and bake for 20 minutes or until slightly golden.

Serve

Serve hot or cold with crème fraîche or ice-cream.
