Croque Madame with Bacon

  • 200 g Eskort Round Cut Bacon
  • 8 slices brioche bread
  • 2 handfuls baby spinach
  • 4 eggs
  • 60ml (¼ cup) butter
  • 60ml (¼ cup) flour
  • 500ml (2 cups) milk
  • 60ml (¼ cup) grated Parmesan cheese
  • 60ml (¼ cup) Gorgonzola cheese
  • 250ml (1 cup) white cheddar cheese
  • salt and pepper to taste
  • 15ml (1 tbsp) olive oil

  • Bacon
  • Preheat the oven to 180°C.
  • Place the bacon on a baking tray and bake for 10 minutes.
  • Cheese Sauce
  • While the bacon is cooking, melt the butter in a saucepan over a moderate heat.
  • Mix in the flour and fry for 1 minute.
  • Slowly add milk while stirring with a whisk.
  • When the sauce starts to thicken and bubble, turn off the heat.
  • Stir in the cheeses until melted.
  • Croque Madame
  • Place four slices of bread on a baking tray and spread with cheese sauce.
  • Add baby spinach and bacon, then close the sandwich with another slice of bread.
  • Pour the remainder of the sauce over the four sandwiches and bake in the oven for 10 minutes.
  • Fry the eggs in olive oil over a medium heat.
  • Remove the sandwiches from the oven and top each sandwich with a fried egg.


Garnish with micro greens and serve.
