  • Fried Calamari and Crispy Bacon
  • 400 g Eskort Streaky Bacon
  • 1 kg calamari tubes
  • 45 ml (3 T) olive oil
  • olive oil, for frying
  • Lemon-Butter Sauce
  • 45 ml (3 T) olive oil
  • 60 ml (¼ C) butter, melted
  • 60 ml (¼ C) lemon juice
  • 15 ml (1 T) black pepper
  • 15 ml (1 T) cayenne pepper
  • 2 cloves garlic
  • salt, to taste

  • Substitutions:
  • Butter (lactose): Use ghee (clarified butter).


  • Lemon-Butter Sauce
  • Pulse all ingredients in a food processor until well combined and set aside.
  • Fried Calamari and Crispy Bacon
  • In a large frying pan over moderate heat, fry bacon until crispy then remove from the pan.
  • Turn the heat up to high, coat calamari tubes in olive oil and flash fry in the hot pan.
  • Turn the heat down, pour in the sauce and shake well to coat the calamari.
  • Remove from heat and mix in the crispy bacon.


Serve with a side of crusty bread.
