- 1 pack Eskort Frikkadels
- ¼ Olive Oil
- 4C Cooked Rice
- 1T Rahja Mild
- 1T Smoked Paprika
- 1T Turmeric
- 1t Chillies
- ½ C Chard Corn
- 2T Butter
- 1T Vinegar
- Salt & Pepper to taste
- ½ C Chopped Red Onion
- ½ C Chopped Chard Peppers
- 2C Baby Spinach
- In a medium pan over a moderate heat, add the oil and fry the frikkadels for 5 minutes and remove the frikkadels from heat.
- In the same pan, add some oil and fry the red onions for 4 minutes and then add the rice, paprika, turmeric and chillies and fry for an additional 3 minutes and remove from heat.
- In a small pan over a moderate heat, add the butter and fry the corn with the vinegar, salt and pepper until chard and remove from the heat and add in the spinach.
- To char the peppers, we place them in an oven with the grill function on high until the skins are black. Wrap them with foil to sweat a bit and rub off the charred skins. Slice and use.
