Gammon & Cheese Snackwich
Ingredients
- 8 thin slices of cooked gammon
- 8 slices of bread
- 2 tomatoes, sliced
- 250 ml (1 C) baby spinach
- ½ red onion, thinly sliced
- 250 ml (1 C) white cheese
- 250 ml (1 C) cream cheese
- 60 ml (¼ C) butter, melted

Method
- Butter both sides of the bread slices.
- Starting with cheese, layer all the ingredients on the bread.
- Close and toast in a snackwich maker until golden and crispy.
