Place the pulled pork on the yogurt and serve with the roasted veg and flat bread.
Gluten Free Flatbread with Pulled Pork & Cold Roasted Veg
Ingredients
- 500g Eskort BBQ Pulled Pork
- 4 ripe tomatoes cut in half
- 100g spring onions
- 200g carrots cut into quarters
- 2 t thyme chopped
- 1 garlic clove chopped
- 2 t Cajun spice
- 1C yogurt
- 3 T olive oil
- Salt and pepper
- Flat Bread:
- 2 C almond flour
- 2 C buckwheat flour
- 4 t xantham gum
- 4 t baking powder
- 1 t salt
- 1 ¼ C water
Method
- Preheat the oven to 190°
- Place the tomatoes, spring onions and rainbow carrots onto a lined baking tray.
- Dress the vegetables with the olive oil, thyme, garlic, and Cajun Spice.
- Season with salt and pepper and bake for 10min.
- Remove the vegetables from the oven and allow to cool down.
- Flat Bread:
- Combine all the ingredients in a bowl and mix well to form a ball of dough.
- Divide the dough into 8 pieces.
- Roll them out with some buckwheat flour and fry them in a dry pan until golden on both sides. 2-3min on a side.
- Heat the BBQ Pulled Pork in a frying pan for 6-7min.
