Gluten Free Flatbread with Pulled Pork & Cold Roasted Veg

Ingredients
500g Eskort BBQ Pulled Pork
4 ripe tomatoes cut in half
100g spring onions
200g carrots cut into quarters
2 t thyme chopped
1 garlic clove chopped
2 t Cajun spice
1C yogurt
3 T olive oil
Salt and pepper
Flat Bread:
2 C almond flour
2 C buckwheat flour
4 t xantham gum
4 t baking powder
1 t salt
1 ¼ C water
Method
Preheat the oven to 190°
Place the tomatoes, spring onions and rainbow carrots onto a lined baking tray.
Dress the vegetables with the olive oil, thyme, garlic, and Cajun Spice.
Season with salt and pepper and bake for 10min.
Remove the vegetables from the oven and allow to cool down.
Flat Bread:
Combine all the ingredients in a bowl and mix well to form a ball of dough.
Divide the dough into 8 pieces.
Roll them out with some buckwheat flour and fry them in a dry pan until golden on both sides. 2-3min on a side.
Heat the BBQ Pulled Pork in a frying pan for 6-7min.
Serve
Place the pulled pork on the yogurt and serve with the roasted veg and flat bread.
