Gluten Free Flatbread with Pulled Pork & Cold Roasted Veg

  • 500g Eskort BBQ Pulled Pork
  • 4 ripe tomatoes cut in half
  • 100g spring onions
  • 200g carrots cut into quarters
  • 2 t thyme chopped
  • 1 garlic clove chopped
  • 2 t Cajun spice
  • 1C yogurt
  • 3 T olive oil
  • Salt and pepper
  • Flat Bread:
  • 2 C almond flour
  • 2 C buckwheat flour
  • 4 t xantham gum
  • 4 t baking powder
  • 1 t salt
  • 1 ¼ C water


  • Preheat the oven to 190°
  • Place the tomatoes, spring onions and rainbow carrots onto a lined baking tray.
  • Dress the vegetables with the olive oil, thyme, garlic, and Cajun Spice.
  • Season with salt and pepper and bake for 10min.
  • Remove the vegetables from the oven and allow to cool down.
  • Flat Bread:
  • Combine all the ingredients in a bowl and mix well to form a ball of dough.
  • Divide the dough into 8 pieces.
  • Roll them out with some buckwheat flour and fry them in a dry pan until golden on both sides. 2-3min on a side.
  • Heat the BBQ Pulled Pork in a frying pan for 6-7min.


Place the pulled pork on the yogurt and serve with the roasted veg and flat bread.
