Ingredients

  • 8 slices Eskort Chopped Ham Roll
  • 250 ml (1 C) wilted spinach
  • 125 ml (½ C) leeks, fried
  • 125 ml (½ C) feta
  • 125 ml (½ C) cream cheese
  • 125 ml (½ C) white cheese, grated
  • 8 slices white bread
  • 45 ml (3 T) butter
  • salt and pepper to taste

Method

  • Heat the jaffle iron over moderate heat.
  • In a large mixing bowl, combine spinach, leeks, feta, cream cheese and white cheese.
  • Season with salt and pepper to taste.
  • Place slices of ham onto a slice of bread, add the spinach and cheese mixture and close with another slice of bread.
  • Grease the jaffle iron with butter and toast the sandwich for approximately 5 minutes on each side.

Serve

Serve with potato chips or veggie chips.
