Dressing
Add all the ingredients in a glass jar and shake well.
Place peppers on an oven tray, season with salt and pepper, drizzle some olive oil and roast for 20-25min on 180 degrees. Wash your cucumbers and slice them thin. Slice red onion and set aside.
Clean and cut your pineapple into slices and halves. On a medium grilling pan, grill pineapple until charred lines show.
Cut your ham into thick slices and grill until nicely charred.
In a large bowl, add peppers, cucumbers, pineapple, red onion, parsley and half of the ham and toss well.
Transfer the salad into a separate clean bowl, add the rest of the ham and crumb the feta on top.
