Honey Glazed Rasher Salad
Ingredients
- Eskort Honey Glazed Rashers pan fried
- 1 Head green lettuce
- 3-4 Kale leaves (chopped)
- 1 Handful baby tomato (cut in half)
- 1 Large carrot sliced in ribbons
- 1 Cucumber (thinly sliced)
- 2 Radishes (thinly sliced)
- Chives (chopped fine to sprinkle)
- Salt & pepper
Dressing
- 1 Tblspn Sesame seeds (toasted)
- 2 Tblspn Lemon juice
- Olive oil
- 1 Tblspn Maple syrup
- 1 Tblsp White wine vinegar or apple cider
- 2 Garlic cloves (finely chopped)
- ½ Tspn Tumeric
- Pinch of salt and pepper
- In a bowl or a small jar, add all ingredients and shake well
Method
Place peppers on an oven tray, season with salt and pepper, drizzle some olive oil and roast for 20-25min on 180 degrees. Wash your cucumbers and slice them thin. Slice red onion and set aside.
On a medium heat pan, fry your rashers until nice and golden. Then cut into cubes and set aside.
Add all ingredients into a large salad bowl followed by the cubed rashers. Mix your salad gently and then pour your dressing over and enjoy.
