Ingredients

  • Eskort Honey Glazed Rashers pan fried
  • 1 Head green lettuce
  • 3-4 Kale leaves (chopped)
  • 1 Handful baby tomato (cut in half)
  • 1 Large carrot sliced in ribbons
  • 1 Cucumber (thinly sliced)
  • 2 Radishes (thinly sliced)
  • Chives (chopped fine to sprinkle)
  • Salt & pepper

Dressing

  • 1 Tblspn Sesame seeds (toasted)
  • 2 Tblspn Lemon juice
  • Olive oil
  • 1 Tblspn Maple syrup
  • 1 Tblsp White wine vinegar or apple cider
  • 2 Garlic cloves (finely chopped)
  • ½ Tspn Tumeric
  • Pinch of salt and pepper
  • In a bowl or a small jar, add all ingredients and shake well

Method

Place peppers on an oven tray, season with salt and pepper, drizzle some olive oil and roast for 20-25min on 180 degrees. Wash your cucumbers and slice them thin. Slice red onion and set aside.

On a medium heat pan, fry your rashers until nice and golden. Then cut into cubes and set aside.

Add all ingredients into a large salad bowl followed by the cubed rashers. Mix your salad gently and then pour your dressing over and enjoy.

Serve

Serve with fillings of your choice.
