Ingredients

  • 4 Eskort Jalapeño Pork Sausages
  • 125 ml (½ C) frozen corn
  • 125 ml (½ C) cream cheese
  • 5 ml (½ t) harissa paste (or any hot sauce)
  • 4 large butter lettuce leaves
  • 30 ml (2 T) onion marmalade
  • 60 ml (¼ C) mayonnaise
  • zest and juice of 1 lime
  • 2 wraps

Method

  • Remove pork sausage meat from sausage casing.
  • Press sausage meat into oval patties and fry in a pan over moderate heat until golden.
  • Mix the corn, cream cheese and harissa paste together.
  • Mix lime zest and juice into the mayonnaise.

Serve

Pack everything in separate containers if taking to work and assemble your wrap at lunchtime.
