  • 750g Eskort Loin Ribs

Ingredients for Braai Sarmie

  • 10 slices of ciabatta bread
  • 1 C feta cheese
  • 1 C mayonnaise 
  • 1 C mozzarella cheese

Ingredients for the salad

  • ¼ C lemon oil 
  • ¼ C butter 
  • 3 T Dijon mustard 
  • 1 C spring onions 
  • 4 C baby spinach 
  • 2 C baby tomatoes
  • Salt and pepper to taste


  • Get your fire nice and hot. 
  • For the salad dressing, heat a frying pan over a moderate heat and add the lemon oil, butter, and mustard. 
  • Add the spring onion to the butter and fry for 2 min. Pour the butter and mustard sauce with the spring onions over the baby spinach. 
  • Cut the baby tomatoes into halves and add them to the salad. 
  • Toss the salad until everything mixes through.
  • For the braai sarmies, add the feta and mayonnaise in a mixing and whip together. Spread generously onto 5 of the ciabatta slices. 
  • Top with mozzarella cheese and close the sarmies. 
  • Place the braai sarmies with the ribs on a braai grid and braai the ribs and sarmies over medium heat for 7 min on each side.


To serve

  • Serve the ribs, sarmies, and salad together.
