Serve with veggie chips or slices of low GI toast.
Magic No-Mac and Cheese
Ingredients
- 500g Eskort Smoked Viennas, cut into coins
- 125ml (½ cup) leeks chopped
- 15ml (1 tbsp) fresh thyme chopped
- 15ml (1 tbsp) chicken stock powder
- 60ml (¼ cup) butter
- 60ml (¼ cup) potato starch
- 500ml (2 cups) milk
- 500ml (2 cups) grated white cheddar
- 500ml (2 cups) cauliflower chopped
- 60ml (¼ cup) panko crumbs
- Olive oil, for cooking
- Salt and pepper, for seasoning
Method
- In a large saucepan, heat some olive oil over a moderate heat.
- Add the leeks and thyme to the pan and fry until glossy.
- Add the butter, chicken stock powder and flour, fry and brown the flour for one minute.
- Add the milk and mix until a sauce forms.
- Add the viennas, cauliflower and one cup of cheese to the sauce and mix well.
- Add the mixture to a baking tray or individual ramekins.
- Top with the rest of the cheese and panko crumbs.
- Bake for 10 to 15 minutes until golden brown.
