Ingredients
500g Eskort Smoked Viennas, cut into coins
125ml (½ cup) leeks chopped
15ml (1 tbsp) fresh thyme chopped
15ml (1 tbsp) chicken stock powder
60ml (¼ cup) butter
60ml (¼ cup) potato starch
500ml (2 cups) milk
500ml (2 cups) grated white cheddar
500ml (2 cups) cauliflower chopped
60ml (¼ cup) panko crumbs
Olive oil, for cooking
Salt and pepper, for seasoning
Method
In a large saucepan, heat some olive oil over a moderate heat.
Add the leeks and thyme to the pan and fry until glossy.
Add the butter, chicken stock powder and flour, fry and brown the flour for one minute.
Add the milk and mix until a sauce forms.
Add the viennas, cauliflower and one cup of cheese to the sauce and mix well.
Add the mixture to a baking tray or individual ramekins.
Top with the rest of the cheese and panko crumbs.
Bake for 10 to 15 minutes until golden brown.
Serve
Serve with veggie chips or slices of low GI toast.
