  • 500g Eskort Smoked Viennas, cut into coins
  • 125ml (½ cup) leeks chopped
  • 15ml (1 tbsp) fresh thyme chopped
  • 15ml (1 tbsp) chicken stock powder
  • 60ml (¼ cup) butter
  • 60ml (¼ cup) potato starch
  • 500ml (2 cups) milk
  • 500ml (2 cups) grated white cheddar
  • 500ml (2 cups) cauliflower chopped
  • 60ml (¼ cup) panko crumbs
  • Olive oil, for cooking
  • Salt and pepper, for seasoning


  • In a large saucepan, heat some olive oil over a moderate heat.
  • Add the leeks and thyme to the pan and fry until glossy.
  • Add the butter, chicken stock powder and flour, fry and brown the flour for one minute.
  • Add the milk and mix until a sauce forms.
  • Add the viennas, cauliflower and one cup of cheese to the sauce and mix well.
  • Add the mixture to a baking tray or individual ramekins.
  • Top with the rest of the cheese and panko crumbs.
  • Bake for 10 to 15 minutes until golden brown.


Serve with veggie chips or slices of low GI toast.
