Ingredients
- Mediterranean Meatballs
- 350g Eskort Mini Frikkadels
- 5 ml (1 t) cumin
- 5 ml (1 t) rosemary, chopped
- 5 ml (1 t) paprika
- 5 ml (1 t) lemon zest
- 45 ml (3 T) olive oil
- 125 ml (½ C) sundried tomatoes
- 4 panini breads
- salt and pepper
- olive oil for toasting and frying
- Tzatziki
- 125 ml (½ C) diced cucumber
- 250 ml (1 C) plain double-thick yoghurt
- a pinch of black pepper
- 60 ml (¼ C) mint leaves
Method
- Mediterranean Meatballs
- In a frying pan over moderate heat, fry frikkadels in olive oil until golden.
- Place cumin, rosemary, lemon zest and sundried tomatoes in a food processor or blender. Add 3 tablespoons of olive oil and blend until a smooth paste forms.
- Add the paste to the frikkadels, stir through and remove from heat.
- Season with salt and pepper.
- Lightly brush paninis with olive oil and toast until golden.
- Tzatziki
- Combine all the ingredients in a bowl.
Serve
Serve the meatballs on toasted panini bread.
Add tzatziki and garnish with fresh mint leaves.
