Dress and serve the bread salad with a hand full of mixed chopped herbs.
Onion & Whiskey Butter Kassler Chops
Ingredients
- Chops with onion and whiskey butter:
- 500 g Eskort Kassler chops
- olive oil for cooking
- 2 onions
- 65 ml whisky
- 5 ml rosemary, chopped
- 250 ml butter (room temperature)
- 10 ml black pepper
- Bread salad:
- ½ loaf bread, cut up in chunky blocks (4 cups)
- 65 ml olive oil
- 65 ml chives, chopped
- 2 cloves garlic, chopped
- 10 ml white pepper
- 5 ml salt
- Dressing for bread salad:
- 250 ml cream cheese
- Zest and juice of one lemon
- salt and pepper to taste
- 250 ml tangy mayonnaise
Method
- Onion and whiskey butter:
- Fry the onions in olive oil in a moderately heated frying pan until soft and brown. Set aside to cool.
- Place the onions, whiskey, rosemary, butter and black pepper in a food processor and pulse until a paste forms.
- Cover the Kassler chops with the butter and refrigerate overnight.
- Braai the chops for 10 – 15 minutes turning frequently.
- Bread salad:
- Preheat the oven to 180°C.
- Place the bread chunks in a roasting tray and drizzle with olive oil.
- Add chives, pepper and garlic, season with salt and bake for 15 – 20 minutes.
- Dressing:
- Place the dressing ingredients in a mixing bowl and whip until well combined.
