Oven-Baked Cheesy Russian Roll with Chilli Con Carne

Ingredients
500g Eskort Cheese Russians
250ml (1 cup) Hearty Tomato Sauce
1 tin red kidney beans
1 red onion, chopped
1 red chilli, chopped
1 green pepper, chopped
6 large hot dog buns
500ml (2 cups) mozzarella cheese, grated
125ml (½ cup) spring onions, chopped
45ml (3 tbsp) olive oil
5ml salt
5ml pepper
Method
Preheat the oven to 180°C.
Chilli Con Carne
Heat the olive oil in a saucepan over a high heat.
Fry the red onion, red pepper and chilli until the onion is glossy.
Add the kidney beans and tomato sauce and stir well, then remove from the heat.
Russian Roll
Slice open each hot dog bun from the top, but not all the way through.
Add a cheese russian to each bun then top with the chilli con carne and mozzarella.
Bake in the oven until the cheese melts and becomes golden-brown.
Serve
Garnish with chopped spring onion and serve.
