Oven-Baked Cheesy Russian Roll with Chilli Con Carne

  • 500g Eskort Cheese Russians
  • 250ml (1 cup) Hearty Tomato Sauce
  • 1 tin red kidney beans
  • 1 red onion, chopped
  • 1 red chilli, chopped
  • 1 green pepper, chopped
  • 6 large hot dog buns
  • 500ml (2 cups) mozzarella cheese, grated
  • 125ml (½ cup) spring onions, chopped
  • 45ml (3 tbsp) olive oil
  • 5ml salt
  • 5ml pepper


  • Preheat the oven to 180°C.
  • Chilli Con Carne
  • Heat the olive oil in a saucepan over a high heat.
  • Fry the red onion, red pepper and chilli until the onion is glossy.
  • Add the kidney beans and tomato sauce and stir well, then remove from the heat.
  • Russian Roll
  • Slice open each hot dog bun from the top, but not all the way through.
  • Add a cheese russian to each bun then top with the chilli con carne and mozzarella.
  • Bake in the oven until the cheese melts and becomes golden-brown.


Garnish with chopped spring onion and serve.
