Ingredients

  • 1Kg Eskort Frikkadel
  • 2 bags Baby Spinach
  • 1T Fresh ginger finely chopped 
  • 2T Chives chopped 
  • ½ C Spring onions chopped 
  • 2T Soy sauce
  • 1 T Paprika
  • 4C Beef stock (4 T beef stock powder dissolved in 4 C water) 
  • 2T Olive oil
  • 1 onion cut into ¼ ‘s 
  • 2 carrots roughly chopped into 3 cm pieces 
  • 1 Garlic clove sliced 
  • 1 Bay leaf 
  • Olive oil for cooking 

Method

  • Heat a frying pan over a moderate heat, add the olive oil, carrots, onion and garlic to the pan and fry for 5 min. 
  • Add the beef stock, ginger, soy sauce and the bay leaf and let simmer for 20 minutes 
  • Pan fry frikkadels with some olive oil until cooked and remove from heat
  • Add spinach and frikkadels to the hot broth and stir the spinach through.  

Serve

  • Garnish the broth with the chives and spring onion and serve.
