Ingredients
Pork Chop Noodle Salad
Leftover Eskort Pork Chops, thinly sliced
500 ml (2 C) cooked noodles
2 spring onions, chopped
3 handfuls pak choi
Zesty Soy Dressing
30 ml (2 T) tomato jam
30 ml (2 T) soya sauce
30 ml (2 T) oyster sauce
5 ml (1 t) sesame oil
Zest and juice of 1 lime
5 ml (1 t) sriracha sauce
45 ml (3 T) toasted sesame seeds
Allergens
This recipe contains wheat (gluten), sesame seeds and soya (soy).
Substitutions
Soya Sauce (soy): Use coconut aminos.
Noodles (gluten): Use rice noodles or any other gluten-free noodle.
Sesame seeds: Omit if you have a seed allergy.
Method
Spicy Soy Dressing
In a small bowl, mix all the dressing ingredients until well combined.
Pork Chop Noodle Salad
Place the noodles in a large bowl.
Pour the dressing over the noodles and toss to coat.
Serve
Serve a portion of dressed noodles topped with pork chop slices, pak choi and chopped spring onion.
