Pork Chop #1: Pork Chop Noodle Salad with Zesty Soy Dressing
Ingredients
- Pork Chop Noodle Salad
- Leftover Eskort Pork Chops, thinly sliced
- 500 ml (2 C) cooked noodles
- 2 spring onions, chopped
- 3 handfuls pak choi
- Zesty Soy Dressing
- 30 ml (2 T) tomato jam
- 30 ml (2 T) soya sauce
- 30 ml (2 T) oyster sauce
- 5 ml (1 t) sesame oil
- Zest and juice of 1 lime
- 5 ml (1 t) sriracha sauce
- 45 ml (3 T) toasted sesame seeds

- This recipe contains wheat (gluten), sesame seeds and soya (soy).
- Substitutions
- Soya Sauce (soy): Use coconut aminos.
- Noodles (gluten): Use rice noodles or any other gluten-free noodle.
- Sesame seeds: Omit if you have a seed allergy.
Method
- Spicy Soy Dressing
- In a small bowl, mix all the dressing ingredients until well combined.
- Pork Chop Noodle Salad
- Place the noodles in a large bowl.
- Pour the dressing over the noodles and toss to coat.
