Pork Rump Taco’s
Ingredients:
- Eskort Pork Rump Steak
- 300g taco shells follow the cooking instructions on the package
- 2 C leeks chopped
- 1 tin butter beans
- 1 red onion thinly sliced
- 1 C feta
- ½ C pickled jalapenos
Method
- Heat a frying pan over a high heat.
- Season the steak with olive oil and salt.
- Fry the rump for 6 min on each side and 1 min on the fat side.
- Allow the rump to rest for 5 min before you slice it.
- Heat a frying pan on a moderate heat and fry the leeks with some oil until soft.
- Combine the leeks, beans, and red onion in a mixing bowl with the jalapenos
Serve:
- Fill the taco shells with the veggies and add the sliced rump, the feta and coriander leaves.
