Ingredients

  • 1 packet Eskort Prego Steaks
  • 250 ml (1 C) butternut, roasted
  • 1 red pepper, charred
  • 250 ml (1 C) canned butter beans, drained
  • zest of 1 lemon
  • 60 ml (ΒΌ C) feta cheese
  • 1 handful baby spinach
  • Assemble
  • On a wrap, place baby spinach, then mash and finish off with the prego steak strips.
  • Wrap tightly and pack into a lunchbox for work.

Method

  • Fry prego steaks in a pan over medium heat and slice into strips.
  • In a bowl, mash beans, butternut, charred pepper, lemon and feta.

Serve

Serve with your favourite sauces.
