Prego Steak & Roasted Butternut Wrap
Ingredients
- 1 packet Eskort Prego Steaks
- 250 ml (1 C) butternut, roasted
- 1 red pepper, charred
- 250 ml (1 C) canned butter beans, drained
- zest of 1 lemon
- 60 ml (¼ C) feta cheese
- 1 handful baby spinach
- Assemble
- On a wrap, place baby spinach, then mash and finish off with the prego steak strips.
- Wrap tightly and pack into a lunchbox for work.
Method
- Fry prego steaks in a pan over medium heat and slice into strips.
- In a bowl, mash beans, butternut, charred pepper, lemon and feta.
