Pulled Pork Noodles With Stir Fry
Ingredients
- 1Kg Pulled pork
- 400g Noodles raw (we used thin egg noodles)
- 1C Vegetable stock (1T of vegetable stock powder dissolved in 1 cup water)
- 1T Soy sauce
- 1T Red wine vinegar
- 1T Olive oil
- 1t Minced garlic
- 2 Carrots(stripped)
- ½ Cucumber ribbons
- 2 C Broccoli
- 1 Red pepper
- ½ C Chopped Spring onions
Method
- Heat a frying pan over a moderate heat, add in oil and cook garlic and onion for 5 minutes.
- Add broccoli, carrot, cucumber, and pepper and cook for 6 minutes.
- Add in the pulled pork and fry for an additional 5 minutes or until the meat is cooked.
- Stir in the soy sauce and vinegar.
- In a medium stock pot, heat the vegetable stock.
- Cook the noodles in the already heated broth.
- Add the vegetables and pulled pork to the noodles.
Serve
- Divide noodle into 4 portions and serve in soup bowls while hot
