Ingredients

  • 500 g Eskort Rib Burgers
  • 250 ml (1 C) red onion, caramelised
  • 250 ml (1 C) cherry tomatoes, charred
  • 250 ml (1 C) cheddar cheese
  • 250 ml (1 C) mozzarella cheese
  • 60 ml (¼ C) mayonnaise
  • 60 ml (¼ C) sliced gherkins
  • 4 seedless burger buns
  • 45 ml (3 T) butter

Method

  • In a frying pan over moderate heat, fry the Rib Burgers for 5 – 6 minutes on each side, turning frequently.
  • Preheat the jaffle iron over a moderate heat.
  • Slice burger buns in half and butter the insides of the buns.
  • Place the buttered sides facing the jaffle iron and top with half a rib burger patty, onion, tomatoes, cheddar, mayo, mozzarella and gherkins.
  • Close with the other half of the bun and toast in the jaffle iron for 3 – 5 minutes on each side.
