Roasted Baby Carrots with Red Pesto Quinoa, Mixed Seeds & Eskort Prego Steaks

Ingredients

  • 1 Pack Eskort Prego Steaks
  • 500g baby Carrots
  • ¼ C red pepper pesto
  • ½ C mixed seeds
  • 2 C cooked quinoa
  • Olive oil for cooking
  • Salt and pepper to taste

Method

  • Preheat the oven to 200°C.
  • Place the baby carrots onto a greased oven tray and drizzle with some olive oil.
  • Season the carrots with salt and pepper to your taste and bake them for 10min.
  • While the carrots are in the oven heat a frying pan over a moderate heat.
  • Cover each Prego Steak with 1 T of olive oil and fry them for 5-6 min on each side. Allow the steaks to rest in the pan for 1-2min.
  • Combine the cooked quinoa with the red pepper pesto.
  • Add the mixed seeds to the carrots in the oven for the last 3 min.

Serve

Thinly slice the Prego steaks and serve them on the quinoa with the roasted carrots and seeds.
